- 300g Italian Savoiardi
- 3 shots Marzano Caffè espresso, cooled
- 20ml cognac or Grand Marnier
- 500g mascarpone
- 6 large eggs, separated
- 70g sugar
- 80g dark chocolate, grated
- Cocoa powder for dusting


1. Brew 3 shots Marzano Caffè espresso; let cool. Add cognac or Grand Marnier.
2. Whisk egg yolks and sugar until creamy.
3. Fold in grated dark chocolate and mascarpone until smooth.
4. Whip egg whites with a pinch of salt until stiff peaks form.
5. Gently fold whipped egg whites into mascarpone mixture.
6. Spread mascarpone cream in a dish, layer with untreated ladyfingers.
7. Sprinkle cooled espresso mixture over ladyfingers.
8. Repeat layering, finishing with a mascarpone cream layer on top.
9. Dust generously with cocoa powder.
10. Refrigerate for 4 hours or overnight.
